1 lb sirloin steak, cut into bite-sized pieces

1 lb baby potatoes, halved

4 tablespoons unsalted butter

4 cloves garlic, minced

1 teaspoon fresh rosemary, chopped (or 1/2 teaspoon dried)

1 teaspoon fresh thyme, chopped (or 1/2 teaspoon dried)

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Preheat the oven: Begin by preheating your oven to 425°F (220°C).

    Prepare the potatoes: In a large bowl, toss the halved baby potatoes with 2 tablespoons of olive oil, salt, and pepper. Spread them evenly on a baking sheet.

      Roast the potatoes: Place the baking sheet in the oven and roast for about 25-30 minutes, or until the potatoes are golden brown and crispy on the outside, flipping halfway through.

        Cook the steak bites: While the potatoes are roasting, heat a large skillet over medium-high heat. Add 2 tablespoons of butter. Once melted, add the steak bites in a single layer, avoiding overcrowding the pan. Season with salt and pepper.

          Sear the steak: Cook the steak bites for about 2-3 minutes per side for medium-rare, or until they reach your preferred doneness. Adjust the cooking time based on the size of the pieces.

            Add garlic and herbs: In the final minute of cooking the steak, add minced garlic, rosemary, and thyme to the skillet. Stir to combine, ensuring the garlic does not burn. Cook until fragrant, about 30 seconds.

              Finish with butter: Remove the skillet from heat and stir in the remaining 2 tablespoons of butter until melted and combined with the meat and herbs.
