1 lb sirloin steak, cut into bite-sized cubes

1 lb baby potatoes, halved

4 tablespoons unsalted butter

5 cloves garlic, minced

1 teaspoon fresh rosemary, chopped

1 teaspoon fresh thyme, chopped

Salt and pepper, to taste

2 tablespoons olive oil

Fresh parsley, chopped (for garnish)

Lemon wedges (for serving)

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Prepare the Potatoes: In a large bowl, combine the halved baby potatoes with olive oil, salt, and pepper. Toss to coat evenly. Spread the potatoes out on a baking sheet in a single layer.

      Roast the Potatoes: Place the baking sheet in the preheated oven and roast for 25-30 minutes, or until the potatoes are golden and tender. Toss halfway through for even cooking.

        Cook the Steak Bites: While the potatoes are roasting, heat a large skillet over medium-high heat. Add 2 tablespoons of butter and an additional tablespoon of olive oil to the pan.

          Sear the Steak: Once the butter is melted and bubbling, add the cubed steak to the skillet in a single layer, ensuring not to overcrowd the pan. Season with salt and pepper. Sear the steak bites for 2-3 minutes on each side until browned, but still medium-rare in the center. You can cook them longer if you prefer your steak well done.

            Add Garlic & Herbs: Reduce the heat to medium. Add the minced garlic, rosemary, and thyme to the pan. Cook for an additional 1-2 minutes, until the garlic is fragrant and slightly golden.

              Finish with Butter: Remove the skillet from heat and stir in the remaining 2 tablespoons of butter until melted and well combined with the steak and herbs.
