1 pound (450g) boneless, skinless chicken thighs

1 pound (450g) baby potatoes, halved

4 tablespoons unsalted butter

5 cloves garlic, minced

1 teaspoon smoked paprika

1 teaspoon dried Italian herbs (basil, oregano, thyme)

Salt and pepper, to taste

1 tablespoon olive oil

Fresh parsley, chopped (for garnish)

Lemon wedges (for serving)

Prepare the Chicken: Season the chicken thighs with smoked paprika, Italian herbs, salt, and pepper on both sides.

    Cook the Potatoes: In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the halved baby potatoes and season with salt. Cook for about 10-12 minutes, stirring occasionally, until they are golden brown and tender.

      Remove Potatoes: Once cooked, remove the potatoes from the skillet and set them aside.

        Cook the Chicken: In the same skillet, melt the butter over medium heat. Add minced garlic and sauté for about 1 minute until fragrant. Place the seasoned chicken thighs in the skillet and cook for about 5-7 minutes on each side, or until golden brown and cooked through (internal temperature should reach 165°F or 75°C).

          Combine Ingredients: Return the cooked potatoes to the skillet with the chicken. Toss everything together gently to coat the potatoes and chicken in the garlic butter sauce. Cook for an additional 2-3 minutes to heat through.

            Garnish and Serve: Remove the skillet from the heat, sprinkle with fresh chopped parsley, and serve hot with lemon wedges on the side for squeezing over the dish.
