Garlic Bread Grilled Cheese

4 slices of thick-cut sourdough bread

1 cup shredded sharp cheddar cheese

1 cup shredded mozzarella cheese

4 tablespoons unsalted butter, softened

3 cloves garlic, minced

1 teaspoon garlic powder

1 teaspoon dried parsley

Salt and pepper to taste

Optional: Red pepper flakes for a spicy kick

Instructions
 

In a small bowl, combine the softened butter, minced garlic, garlic powder, dried parsley, salt, and pepper. Mix until well combined to create a garlic butter spread.

    Heat a non-stick skillet or griddle over medium heat.

      Spread a generous amount of the garlic butter on one side of each slice of sourdough bread.

        On the unbuttered side of two slices, layer the shredded sharp cheddar cheese and mozzarella cheese, spreading evenly.

          Place the other two slices on top, buttered side facing out, creating sandwiches.

            Once the skillet is hot, gently place the sandwiches in the skillet. Cook for about 3-4 minutes until golden brown and crispy. Carefully flip the sandwiches and cook for another 3-4 minutes on the other side until the cheese is melted and the bread is evenly toasted.

              Remove from skillet and let sit for a minute before slicing in half.

                Serve warm, optionally with a sprinkle of red pepper flakes for added flavor.
