Fried Bananas with Cinnamon Butter Sauce

2 ripe but firm bananas

1/2 cup all-purpose flour

1/4 cup cornstarch

1/4 tsp salt

1/2 tsp ground cinnamon

1/2 cup cold sparkling water

Oil for frying (vegetable or coconut oil)

1/4 cup unsalted butter

2 tbsp brown sugar

1/2 tsp vanilla extract

A pinch of ground cinnamon (for the sauce)

Chopped nuts (optional, for garnish)

Instructions
 

Begin by preparing the sauce. In a small saucepan, melt the butter over medium heat. Add the brown sugar, vanilla extract, and a pinch of ground cinnamon. Stir until the sugar is dissolved and the mixture is smooth. Remove from heat and set aside.

    In a mixing bowl, combine the all-purpose flour, cornstarch, salt, and ground cinnamon. Mix well.

      Gradually add the cold sparkling water to the flour mixture, stirring until just combined. The batter should be slightly thick but pourable.

        Heat about 2 inches of oil in a deep skillet or pot over medium-high heat until it reaches 350°F (175°C).

          While the oil is heating, peel the bananas and slice them diagonally into 1-inch thick pieces.

            Once the oil is hot, dip each banana slice into the batter, allowing any excess to drip off before carefully placing it in the hot oil. Do not overcrowd the pan; fry in batches if necessary.

              Fry the bananas for about 1-2 minutes on each side, or until golden brown and crispy. Use a slotted spoon to remove the fried bananas and place them on a paper towel-lined plate to drain excess oil.

                Serve the fried bananas warm, drizzled with the cinnamon butter sauce. If desired, sprinkle with chopped nuts for added texture and flavor.
