Ingredients
  

2 boneless, skinless chicken thighs

2 tablespoons soy sauce

1 tablespoon sriracha (adjust to taste)

1 tablespoon sesame oil

4 cups chicken broth

2 packs of instant ramen noodles (discard flavor packets)

2 cloves garlic, minced

1 tablespoon fresh ginger, grated

1 tablespoon miso paste (optional)

1 tablespoon rice vinegar

1 cup coconut milk

2 tablespoons peanut butter

2 green onions, chopped

1 tablespoon chili flakes (optional for extra heat)

Fresh cilantro, for garnish

Lime wedges, for serving

Marinate the Chicken: In a bowl, mix the soy sauce, sriracha, and sesame oil. Add the chicken thighs and let them marinate for at least 30 minutes for maximum flavor.

    Cook the Chicken: Heat a skillet over medium heat. Once hot, add the marinated chicken thighs. Cook for about 5-6 minutes on each side until well browned and cooked through. Remove from heat, let it rest for a few minutes, and then slice into strips.

      Prepare the Broth: In a large pot, heat the chicken broth over medium heat. Add the minced garlic, grated ginger, and miso paste (if using). Stir well and let it simmer for about 5 minutes.

        Add Coconut Milk: Stir in the coconut milk and rice vinegar into the broth. Allow it to simmer for another 3-5 minutes. Adjust seasoning if needed.

          Cook the Ramen Noodles: In the same pot, add the ramen noodles and cook according to package instructions, usually around 4-5 minutes.

            Combine and Season: Once the noodles are cooked, stir in the peanut butter until fully incorporated. If you like it spicy, sprinkle in the chili flakes.

              Serve: Divide the ramen and broth into bowls. Top with sliced chicken, chopped green onions, and fresh cilantro. Serve with lime wedges on the side for squeezing.
