Fiery Chicken Ramen with Creamy Garlic Sauce

2 boneless, skinless chicken thighs

2 tablespoons chili oil (adjust for heat preference)

3 cloves garlic, minced

1 tablespoon fresh ginger, grated

4 cups chicken broth

2 packs ramen noodles (discard the seasoning packets)

1 tablespoon soy sauce

1 tablespoon miso paste (white or yellow)

1 cup bok choy, chopped

1 cup sliced mushrooms (shiitake or button)

2 green onions, sliced (for garnish)

2 boiled eggs, halved (for garnish)

Sesame seeds (for garnish)

For the Creamy Garlic Sauce:

½ cup mayonnaise

2 tablespoons sriracha (or your favorite hot sauce)

1 tablespoon lemon juice

2 cloves garlic, minced

Salt and pepper, to taste

Instructions
 

Prepare the creamy garlic sauce: In a small bowl, combine mayonnaise, sriracha, lemon juice, minced garlic, and a pinch of salt and pepper. Mix well and set aside in the refrigerator to let the flavors meld.

    Cook the chicken: In a large saucepan over medium heat, heat 1 tablespoon of chili oil. Add the chicken thighs and cook for about 5-7 minutes on each side until cooked through and golden brown. Remove from the pan and let rest for a few minutes before slicing thinly.

      Make the broth: In the same saucepan, add another tablespoon of chili oil. Sauté the minced garlic and grated ginger until fragrant (about 1-2 minutes).

        Combine the broth ingredients: Pour in the chicken broth, soy sauce, and miso paste, stirring until the miso is fully dissolved. Bring the broth to a simmer.

          Add the ramen noodles and vegetables: Add the ramen noodles, bok choy, and mushrooms to the simmering broth. Cook according to noodle package instructions (usually 3-4 minutes) until the noodles are tender and the vegetables are vibrant.

            Assemble the dish: Split the cooked ramen and vegetables into bowls. Top each bowl with sliced fiery chicken.

              Garnish and serve: Drizzle with the creamy garlic sauce, and add half a boiled egg, sliced green onions, and a sprinkle of sesame seeds on top. Serve hot and enjoy your bowl of Fiery Chicken Ramen!
