2 boneless, skinless chicken thighs

2 tablespoons gochujang (Korean chili paste)

1 tablespoon soy sauce

1 tablespoon sesame oil

4 cups chicken broth

2 packs of instant ramen noodles (discard seasoning packets)

2 cups bok choy, roughly chopped

1/2 cup green onions, sliced

1 tablespoon ginger, minced

2 cloves garlic, minced

1/4 cup peanut butter

1/2 cup heavy cream

1 tablespoon lime juice

Salt and pepper to taste

Sesame seeds for garnish

Red pepper flakes (optional for extra heat)

Instructions
 

Marinate the Chicken: In a bowl, combine gochujang, soy sauce, sesame oil, and a sprinkle of salt. Add the chicken thighs, coating them well. Let marinate for at least 30 minutes.

    Cook the Chicken: In a skillet over medium heat, cook the marinated chicken for about 5-7 minutes on each side or until fully cooked and slightly charred. Remove from heat and chop into bite-sized pieces.

      Prepare the Broth: In a large pot, add chicken broth and bring to a boil. Stir in the ginger and garlic, letting them infuse their flavors for about 3 minutes.

        Add Noodles: Once the broth is boiling, add the ramen noodles and cook according to package instructions, usually around 3-4 minutes.
