2 boneless, skinless chicken breasts, sliced into strips

Salt and pepper, to taste

2 tablespoons olive oil

3 cloves garlic, minced

1 cup cherry tomatoes, halved

1 cup fresh spinach

1 teaspoon dried Italian herbs (basil, oregano, or thyme)

1 cup heavy cream

1 cup grated Parmesan cheese

8 oz penne pasta

Fresh basil, for garnish (optional)

Instructions
 

Cook the Pasta: Bring a large pot of salted water to a boil. Add the penne pasta and cook according to package instructions until al dente. Drain and set aside.

    Sauté the Chicken: Season the sliced chicken breasts with salt and pepper. In a large skillet over medium heat, add the olive oil and cook the chicken for about 5-7 minutes, or until golden brown and cooked through. Remove the chicken from the skillet and set aside.

      Prepare the Sauce: In the same skillet, add the minced garlic and sauté for about 30 seconds until fragrant. Add the cherry tomatoes and cook for 2-3 minutes until they start to soften.

        Add Spinach & Seasoning: Stir in the fresh spinach and dried Italian herbs, cooking until wilted.

          Combine with Cream: Pour in the heavy cream and bring the mixture to a gentle simmer. Gradually whisk in the grated Parmesan cheese until melted and creamy.

            Mix it Together: Add the cooked chicken back into the skillet along with the drained pasta. Toss everything together until well-coated in the sauce. Adjust seasoning with salt and pepper to your liking.

              Serve: Remove from heat, garnish with fresh basil if desired, and serve immediately.
