1 cup cooked rice (white or brown)

1 cup shredded rotisserie chicken

1 cup canned sweet corn (drained)

1/2 cup diced red bell pepper

1/4 cup chopped green onions

1/2 cup taco seasoning mix (store-bought or homemade)

1 cup shredded cheddar cheese

1/4 cup sour cream (optional for serving)

Fresh cilantro for garnish (optional)

In a large skillet over medium heat, combine the shredded rotisserie chicken, sweet corn, diced red bell pepper, and taco seasoning. Stir everything together, and let sauté for about 5 minutes, allowing the flavors to meld.

    While the chicken and corn mixture is heating, prepare your cooked rice according to package instructions if it’s not already prepared.
