Ingredients

20 jumbo pasta shells

2 cups fresh spinach, chopped

1 cup ricotta cheese

1 cup shredded mozzarella cheese

1/2 cup grated Parmesan cheese

1 egg

2 cloves garlic, minced

1 teaspoon salt

1/2 teaspoon black pepper

1 teaspoon dried Italian herbs (oregano, basil, thyme)

2 cups marinara sauce

Fresh basil leaves for garnish (optional)

Instructions

Prepare the Pasta: In a large pot, bring salted water to a boil. Cook the jumbo shells according to package instructions until al dente. Drain and set aside to cool.

Make the Filling: In a large mixing bowl, combine the chopped spinach, ricotta cheese, half of the mozzarella, Parmesan cheese, egg, minced garlic, salt, pepper, and Italian herbs. Mix well until all ingredients are well combined.

Preheat the Oven: Preheat your oven to 375°F (190°C).

Stuff the Shells: Take a spoonful of the spinach and ricotta filling and stuff each cooked shell, ensuring they are generously filled.

Assemble the Dish: In a 9x13 inch baking dish, spread a thin layer of marinara sauce on the bottom to prevent sticking. Arrange the stuffed shells in a single layer over the sauce. Pour the remaining marinara sauce over the stuffed shells, then sprinkle the remaining mozzarella cheese on top.

Bake: Cover the baking dish with aluminum foil (to prevent burning) and bake in the preheated oven for 25 minutes. Remove the foil and bake for an additional 10 minutes, or until the cheese is bubbly and golden.

Serve: Let the shells cool for a few minutes before serving. Garnish with fresh basil leaves, if desired.
