Easy Healthy Broccoli Pasta

This Easy Healthy Broccoli Pasta is a quick and delicious meal that's perfect for any night of the week! Made with whole grain pasta and fresh broccoli, it's not only nutritious but full of flavor. Tossed with garlic, a hint of red pepper, and brightened up with lemon juice and zest, this dish comes together in just 20 minutes. Optional Parmesan and fresh basil add the perfect finishing touch. Ideal for a healthy dinner that the whole family will love!

Ingredients
  

8 oz whole grain pasta (spaghetti or penne)

2 cups broccoli florets

2 tablespoons olive oil

3 cloves garlic, minced

1/2 teaspoon red pepper flakes (optional)

Salt and pepper to taste

1/4 cup grated Parmesan cheese (optional)

Juice of 1 lemon

Zest of 1 lemon

Fresh basil, for garnish (optional)

Instructions
 

Cook the Pasta: In a large pot of boiling salted water, cook the whole grain pasta according to package instructions until al dente. Reserve 1/2 cup of pasta water and drain the rest. Set pasta aside.

    Sauté Broccoli: In the same pot, add olive oil over medium heat. Once hot, add the broccoli florets and sauté for about 3-4 minutes, or until they turn bright green and are tender but still crisp.

      Add Garlic: Stir in the minced garlic and red pepper flakes (if using), and sauté for an additional 1-2 minutes until the garlic is fragrant but not browned.

        Combine: Return the drained pasta to the pot with the broccoli. Add reserved pasta water, lemon juice, and lemon zest. Toss everything together to combine, and let it sauté for an additional 1-2 minutes.

          Season: Season with salt and pepper to taste, and mix in grated Parmesan cheese if desired. Toss until evenly coated.

            Serve: Plate the pasta and garnish with fresh basil if using. Serve immediately, drizzling with extra olive oil for added flavor if desired.
