For Chicken Skewers:

1 lb (450g) boneless, skinless chicken thighs, cut into 1-inch pieces

2 tablespoons soy sauce

2 tablespoons fish sauce

1 tablespoon brown sugar

2 cloves garlic, minced

1 tablespoon fresh ginger, grated

1 tablespoon lime juice

1 teaspoon red chili flakes (adjust for heat)

1 tablespoon vegetable oil

Bamboo skewers (soaked in water for 30 minutes)

For Peanut Sauce:

1/2 cup creamy peanut butter

1/4 cup coconut milk

2 tablespoons soy sauce

1 tablespoon lime juice

1 tablespoon honey

1 teaspoon red pepper flakes (adjust for heat)

1 garlic clove, minced

Water (as needed for consistency)

Instructions
 

Marinate the Chicken:

    - In a large bowl, whisk together soy sauce, fish sauce, brown sugar, minced garlic, grated ginger, lime juice, red chili flakes, and vegetable oil.

      - Add the chicken pieces to the marinade, making sure they are well-coated. Cover and refrigerate for at least 30 minutes (or up to 2 hours for more flavor).

        Prepare the Peanut Sauce:

          - In a mixing bowl, combine peanut butter, coconut milk, soy sauce, lime juice, honey, red pepper flakes, and minced garlic. Stir well until smooth.

            - If the sauce is too thick, add a little water until desired consistency is reached. Adjust seasoning if necessary. Set aside.

              Assemble the Skewers:

                - Preheat your grill to medium-high heat.

                  - Thread the marinated chicken pieces onto the soaked bamboo skewers, leaving a little space between each piece for even cooking.

                    Grill the Skewers:

                      - Place the skewers on the preheated grill and cook for about 10-12 minutes, turning occasionally, until the chicken is cooked through and has nice grill marks. The internal temperature of the chicken should reach 165°F (75°C).

                        Serve:

                          - Remove the skewers from the grill and let them rest for a couple of minutes. Serve with the peanut sauce either drizzled on top or on the side for dipping.

                            - Garnish with chopped cilantro, lime wedges, or crushed peanuts for extra flavor and crunch, if desired.
