Ingredients
  

2 large cucumbers, sliced into rounds

1 cup cherry tomatoes, halved

8 oz fresh mozzarella balls (bocconcini)

1/4 cup fresh basil leaves, torn

3 tbsp extra virgin olive oil

2 tbsp balsamic vinegar

Salt and black pepper, to taste

Pinch of red pepper flakes (optional)

Instructions
 

In a large bowl, combine the sliced cucumbers, halved cherry tomatoes, and mozzarella balls.

    Gently toss in the torn basil leaves.

      In a small bowl, whisk together the extra virgin olive oil, balsamic vinegar, salt, and black pepper. If you like a bit of heat, add the red pepper flakes.

        Drizzle the dressing over the salad and toss gently to coat all the ingredients evenly.

          Allow the salad to sit for about 10 minutes at room temperature to allow the flavors to meld.
