Ingredients

8 oz linguine pasta

2 tbsp unsalted butter

1 lb boneless, skinless chicken breasts, diced

3-4 cloves garlic, minced

1 tsp smoked paprika

1/2 tsp cayenne pepper (adjust for spice preference)

1/2 tsp salt

1/4 tsp black pepper

1/2 cup chicken broth

1/2 cup heavy cream

1 cup cherry tomatoes, halved

1/4 cup fresh parsley, chopped

Juice of 1 lemon

Grated Parmesan cheese for serving

Instructions

Cook the Linguine: In a large pot of salted boiling water, cook the linguine according to package instructions until al dente. Reserve 1/2 cup of pasta water before draining. Set the linguine aside.

Prepare the Chicken: In a large skillet over medium-high heat, melt the butter. Add the diced chicken and cook until browned, about 5-7 minutes. Stir frequently to ensure even cooking.

Add Flavors: Once the chicken is cooked through, add the minced garlic, smoked paprika, cayenne pepper, salt, and black pepper to the skillet. Sauté for an additional 2 minutes until the garlic is fragrant.

Create the Sauce: Pour in the chicken broth and bring the mixture to a simmer. Allow it to cook for about 3 minutes, then stir in the heavy cream and cherry tomatoes. Cook for another 3-4 minutes until the sauce thickens slightly.

Combine: Add the cooked linguine to the skillet, tossing it gently to coat with the sauce. If the sauce is too thick, add reserved pasta water a little at a time until desired consistency is reached.

Finish with Freshness: Stir in the chopped parsley and lemon juice. Taste and adjust seasoning if necessary.

Serve: Plate the linguine and top with grated Parmesan cheese. Enjoy your delicious Cowboy Butter Chicken Linguine!
