2 large boneless, skinless chicken breasts

1 cup chipotle ranch dressing (store-bought or homemade)

1 tablespoon olive oil

1 teaspoon garlic powder

1 teaspoon smoked paprika

Salt and pepper, to taste

4 large flour tortillas

1 cup cooked brown rice or cilantro lime rice

1 cup black beans, drained and rinsed

1 cup corn, fresh or frozen

1 cup shredded cheese (cheddar or Mexican blend)

1 cup chopped lettuce

1 medium tomato, diced

1 avocado, sliced

Fresh cilantro, for garnish (optional)

Instructions
 

Marinate the Chicken: In a large bowl, combine the chicken breasts with ½ cup of chipotle ranch dressing, olive oil, garlic powder, smoked paprika, salt, and pepper. Make sure the chicken is evenly coated. Cover and refrigerate for at least 30 minutes, or up to 2 hours for more flavor.
