Easy Chipotle Ranch Grilled Chicken Burrito

2 boneless, skinless chicken breasts

1 tablespoon olive oil

2 tablespoons chipotle ranch dressing (plus more for serving)

1 teaspoon garlic powder

1 teaspoon smoked paprika

1 teaspoon cumin

Salt and pepper to taste

2 large flour tortillas

1 cup cooked rice (white or brown)

1 cup canned black beans, drained and rinsed

1 cup shredded Monterey Jack cheese

1 cup lettuce, shredded

1 medium tomato, diced

1 avocado, sliced

Fresh cilantro, for garnish (optional)

Instructions
 

Marinate the Chicken: In a bowl, combine the olive oil, chipotle ranch dressing, garlic powder, smoked paprika, cumin, salt, and pepper. Add the chicken breasts and coat well. Cover and let marinate in the refrigerator for at least 30 minutes (or up to 4 hours for more flavor).

    Grill the Chicken: Preheat your grill or a grill pan over medium-high heat. Remove the chicken from the marinade and grill for about 6-7 minutes on each side, or until the internal temperature reaches 165°F (75°C). Remove from the grill and let it rest for a few minutes before slicing.

      Prepare the Burritos: Lay out the flour tortillas on a clean surface. Start with a layer of cooked rice on each tortilla, followed by the black beans, sliced grilled chicken, shredded cheese, lettuce, diced tomato, and avocado.

        Wrap the Burrito: Fold in the sides of the tortilla, then roll it up from the bottom to the top, tucking in the filling as you go to create a tight burrito.

          Toast (optional): If you like a crispy exterior, place the burrito seam-side down on a preheated skillet with a little oil. Toast for about 2-3 minutes on each side or until golden brown.
