3 medium cucumbers, thinly sliced

1 teaspoon salt

1 tablespoon rice vinegar

1 tablespoon soy sauce

1 tablespoon sesame oil

2 teaspoons sugar

1 clove garlic, minced

1 teaspoon fresh ginger, grated

1 teaspoon chili flakes (optional for heat)

2 tablespoons sesame seeds, toasted

2 green onions, chopped

Fresh cilantro for garnish

Instructions
 

Prepare the Cucumbers: In a mixing bowl, combine the thinly sliced cucumbers with salt. Let them sit for about 15-20 minutes to allow some moisture to draw out. This will help keep the salad crunchy.

    Mix the Dressing: In a small bowl, whisk together rice vinegar, soy sauce, sesame oil, sugar, minced garlic, grated ginger, and chili flakes (if using) until the sugar dissolves completely.
