Easy Asian Cucumber Salad

Ingredients
  

2 large cucumbers

1 tablespoon salt

1/4 cup rice vinegar

2 tablespoons soy sauce

1 tablespoon sesame oil

1 tablespoon sugar

1 clove garlic, minced

1 teaspoon fresh ginger, grated

1/2 teaspoon red pepper flakes (adjust to taste)

2 green onions, thinly sliced

1 tablespoon sesame seeds

Fresh cilantro leaves, for garnish

Instructions
 

Start by washing the cucumbers and peeling them if desired. Slice them thinly (about 1/8 inch thick).

    In a large bowl, toss the cucumber slices with salt and let them sit for about 15-20 minutes. This will draw out excess moisture and make them crispier.

      After the cucumbers have drained, rinse them under cold water and pat dry with a clean kitchen towel or paper towels.

        In a separate bowl, whisk together the rice vinegar, soy sauce, sesame oil, sugar, minced garlic, grated ginger, and red pepper flakes until well combined.

          Add the cucumbers to the dressing and toss to coat evenly.

            Stir in the sliced green onions and sprinkle with sesame seeds.

              Allow the salad to sit for at least 10 minutes to let the flavors meld together before serving.

                Garnish with fresh cilantro leaves just before serving.
