Ingredients
  

1 kg chicken (cut into pieces)

1 can (400 ml) coconut milk

2 tablespoons vegetable oil

1 large onion, finely chopped

4 cloves garlic, minced

1-inch piece ginger, grated

2 tablespoons curry powder (or East African spice mix)

1 teaspoon turmeric powder

1 teaspoon paprika

2-3 green chilies, slit lengthwise (adjust for heat preference)

Salt to taste

Juice of 1 lime

Fresh cilantro, chopped (for garnish)

Optional: 2 boiled eggs (halved) for garnish

Instructions
 

Marinate the Chicken: In a bowl, combine chicken pieces with lime juice, salt, and half of the curry powder. Let it marinate for at least 30 minutes, preferably in the refrigerator.

    Cook the Onions: In a large skillet or pot, heat the vegetable oil over medium heat. Add the finely chopped onions and sauté until they turn golden brown.

      Add Aromatics: Stir in the minced garlic and ginger. Sauté for about 2 minutes until fragrant.

        Spice It Up: Add the remaining curry powder, turmeric, and paprika into the pot, stirring well to coat the onions. Cook for another minute.

          Brown the Chicken: Add the marinated chicken pieces to the pot, ensuring they are well coated with the spice mixture. Cook for about 5-7 minutes until the chicken is browned on all sides.

            Incorporate Coconut Milk: Pour in the coconut milk and add the green chilies. Mix well and bring the mixture to a gentle simmer.

              Simmer the Chicken: Cover and let the chicken cook in the coconut sauce for about 30 minutes, or until the chicken is cooked through and tender, stirring occasionally.

                Finish and Garnish: Adjust salt to taste. If desired, you can add the halved boiled eggs into the pot just before serving. Garnish with fresh cilantro.

                  Serve: Kuku Paka is best enjoyed with steamed rice, chapati, or a side of ugali. Enjoy your delicious East African meal!
