Ingredients

4 boneless, skinless chicken breasts

8 slices of ham (preferably Black Forest or Virginia ham)

8 slices of Swiss cheese

1 cup all-purpose flour

2 large eggs, beaten

1 cup breadcrumbs (panko for extra crunch)

Salt and pepper, to taste

1 teaspoon garlic powder

1 teaspoon Dijon mustard

1 tablespoon fresh parsley, chopped (for garnish)

For the Creamy Swiss Cheese Sauce:

2 tablespoons unsalted butter

2 tablespoons all-purpose flour

1 cup milk (whole or 2%)

1 cup shredded Swiss cheese

1 teaspoon Dijon mustard

Salt and pepper, to taste

Instructions

Prepare the Chicken:

    - Preheat your oven to 375°F (190°C).

      - Place a chicken breast between two sheets of plastic wrap and pound it to about 1/2 inch thickness using a meat mallet. Repeat with remaining chicken breasts.

        - Season both sides of each chicken breast with salt, pepper, and garlic powder.

          Assemble the Cordon Bleu:

            - Lay 2 slices of ham on each chicken breast, followed by 2 slices of Swiss cheese.

              - Roll each chicken breast tightly, starting from one end, and secure with toothpicks or kitchen twine to hold the filling inside.

                Bread the Chicken:

                  - Set up a breading station with three shallow bowls: one with flour, one with beaten eggs, and one with breadcrumbs.

                    - Dredge each rolled chicken breast in flour, dip into the beaten eggs, and coat with breadcrumbs.

                      Cook the Chicken:

                        - In a large skillet, heat 2 tablespoons of oil over medium heat. Carefully place the chicken rolls in the skillet and cook until golden brown on all sides (about 3-4 minutes per side).

                          - Transfer the browned chicken to a baking dish and bake for 25-30 minutes or until the chicken is cooked through (internal temperature should reach 165°F or 75°C).

Make the Creamy Swiss Cheese Sauce:

                              - In a medium saucepan, melt the butter over medium heat. Whisk in the flour to form a roux and cook for about 1-2 minutes.

                                - Gradually add in the milk, whisking constantly until the mixture thickens (about 3-5 minutes).

                                  - Stir in the shredded Swiss cheese and Dijon mustard until the cheese is melted and the sauce is creamy. Season with salt and pepper to taste.

                                    Serve:

                                      - Remove the toothpicks or twine from the chicken rolls and slice them into medallions.

                                        - Drizzle the creamy Swiss cheese sauce over the chicken or serve it on the side for dipping.

                                          - Garnish with chopped parsley for an added touch of color.
