Ingredients

500g beef sirloin, thinly sliced against the grain

1/2 cup cornflour (cornstarch)

1/2 cup all-purpose flour

1 tsp baking powder

1/4 cup water

Oil for frying

3-4 dried red chillies, chopped

2 cloves garlic, minced

1-inch ginger, grated

1/4 cup sweet chilli sauce

2 tbsp soy sauce

1 tbsp rice vinegar

1 tbsp hoisin sauce

1/2 bell pepper, sliced (red or green)

1/2 onion, sliced

Fresh coriander, for garnish

Sliced spring onions, for garnish

Instructions

Prep the Beef: In a bowl, mix the beef slices with a pinch of salt and allow it to marinate for 15-20 minutes.

Coating the Beef: In a separate bowl, combine cornflour, all-purpose flour, baking powder, and a pinch of salt. Gradually add water to form a batter that's thick but pourable. Dip each piece of marinated beef into the batter, allowing the excess to drip off.

Fry the Beef: Heat oil in a deep frying pan or Wok over medium-high heat. Once hot, carefully add the battered beef slices in batches, ensuring not to overcrowd the pan. Fry until golden and crispy (about 3-4 minutes), then remove and place on a paper towel-lined plate.

Sauté Vegetables: In another pan, add a little oil and stir-fry the chopped dried red chillies, minced garlic, and grated ginger until fragrant. Then add the sliced onion and bell pepper, stir-frying until they are slightly tender.

Make the Sauce: In a bowl, mix together the sweet chilli sauce, soy sauce, rice vinegar, and hoisin sauce. Pour the sauce mixture into the pan with the sautéed vegetables and bring to a simmer.

Combine: Add the crispy fried beef to the pan and toss everything until the beef is nicely coated with the sauce and heated through.

Serve: Remove from heat and garnish with fresh coriander and sliced spring onions. Serve hot over a bed of steamed jasmine rice or alongside stir-fried vegetables.
