Ingredients
  

1 lb fresh salmon, skinless and cut into bite-sized pieces

1 cup panko breadcrumbs

1/2 cup all-purpose flour

2 large eggs, beaten

1 teaspoon garlic powder

1 teaspoon smoked paprika

Salt and pepper, to taste

Oil for frying

For the Bang Bang Sauce:

1/2 cup mayonnaise

1 tablespoon sweet chili sauce

1 tablespoon Sriracha (adjust for spice preference)

1 teaspoon honey

Juice of 1/2 lime

Chopped green onions and sesame seeds for garnish

Prepare the Ingredients: Set up a breading station with three shallow bowls: one for the flour, one for the beaten eggs, and one for the panko breadcrumbs mixed with garlic powder, smoked paprika, salt, and pepper.

    Coat the Salmon Bites: Take each piece of salmon, coat it lightly with flour, then dip it into the beaten eggs, allowing excess to drip off, and finally roll it in the panko breadcrumb mixture to coat evenly.

      Heat the Oil: In a large skillet, heat about 1/2 inch of oil over medium-high heat. To test if it's ready, drop a small piece of panko into the oil; if it sizzles, the oil is hot enough.

        Fry the Bites: Carefully add the salmon bites in batches, frying for about 2-3 minutes per side or until golden brown and crispy. Avoid overcrowding the pan. Once cooked, transfer them to a paper towel-lined plate to drain excess oil.

          Prepare the Bang Bang Sauce: In a bowl, whisk together the mayonnaise, sweet chili sauce, Sriracha, honey, and lime juice until well combined. Adjust seasoning to taste.
