1 lb (450g) chicken breast, cut into bite-sized pieces

1 cup all-purpose flour

1 cup buttermilk

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon paprika

1 teaspoon salt

½ teaspoon black pepper

1 tablespoon cornstarch

½ cup (120ml) mayonnaise

¼ cup (60ml) sweet chili sauce

1 tablespoon sriracha (adjust for heat preference)

2 tablespoons honey

1 tablespoon rice vinegar

Fresh cilantro, chopped (for garnish)

Vegetable oil (for frying)

Instructions
 

Marinate the Chicken: In a bowl, combine the chicken pieces with ½ cup of buttermilk. Let it marinate in the refrigerator for at least 30 minutes.

    Prepare the Breading: In another bowl, mix the flour, cornstarch, garlic powder, onion powder, paprika, salt, and black pepper.

      Dredge the Chicken: Remove the marinated chicken from the fridge and dip each piece into the flour mixture. Shake off excess flour and set aside on a plate.

        Heat the Oil: In a large skillet or deep pan, heat vegetable oil over medium-high heat until it reaches 350°F (175°C). You can test the temperature by dropping a small piece of bread; it should sizzle immediately.

          Fry the Chicken: Carefully add the breaded chicken in batches to avoid overcrowding. Fry until golden brown, approximately 4-5 minutes per side, or until fully cooked. Use a meat thermometer to ensure they reach 165°F (75°C). Remove them and drain on paper towels.

            Prepare the Sauce: In a small bowl, whisk together mayonnaise, sweet chili sauce, sriracha, honey, and rice vinegar until smooth and well-combined.

              Toss the Chicken: In a large mixing bowl, add the crispy chicken and drizzle the sauce over it. Gently toss until the chicken is well-coated.
