Crispy Bang Bang Chicken

Ingredients
  

1 lb chicken breast, cut into bite-sized pieces

1 cup buttermilk

1 cup all-purpose flour

1 cup panko breadcrumbs

1 tsp garlic powder

1 tsp onion powder

1 tsp paprika

1/2 tsp cayenne pepper (adjust to taste)

Salt and pepper to taste

Vegetable oil for frying

Bang Bang Sauce:

1/2 cup mayonnaise

1/4 cup sweet chili sauce

1 tbsp Sriracha (adjust to taste)

1 tsp lime juice

Marinate the Chicken: In a mixing bowl, combine the chicken pieces with buttermilk. Seal the bowl with plastic wrap and let it marinate in the refrigerator for at least 1 hour, or overnight for best results.

    Prepare the Breading Station: In one shallow dish, mix together flour, garlic powder, onion powder, paprika, cayenne pepper, salt, and pepper. In another dish, place the panko breadcrumbs.

      Coat the Chicken: Remove the marinated chicken from the refrigerator. Take each piece and dredge it in the flour mixture, shaking off excess. Then dip the chicken back into the buttermilk and finally coat it with panko breadcrumbs, pressing to adhere well.

        Heat the Oil: In a large skillet, heat about 1 inch of vegetable oil over medium-high heat (approximately 350°F/175°C). You can test the oil by dropping in a small piece of bread; it should sizzle immediately.

          Fry the Chicken: Carefully add the chicken pieces to the hot oil in batches, making sure not to overcrowd the pan. Fry for 4-5 minutes or until golden brown and crispy, turning occasionally. Remove and drain on a paper towel-lined plate.

            Make the Bang Bang Sauce: In a small bowl, whisk together mayonnaise, sweet chili sauce, Sriracha, and lime juice until well combined. Adjust the Sriracha according to your preferred spice level.

              Serve: Toss the crispy chicken pieces in the Bang Bang sauce or serve the sauce on the side for dipping. Garnish with chopped green onions or sesame seeds if desired.
