1 lb boneless, skinless chicken breasts, cut into bite-sized pieces

1 cup buttermilk

1 cup all-purpose flour

1 cup panko breadcrumbs

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon paprika

1 teaspoon salt

½ teaspoon black pepper

Oil for frying (vegetable or peanut oil)

For the Bang Bang Sauce:

½ cup mayonnaise

¼ cup sweet chili sauce

1 tablespoon sriracha (adjust based on spice preference)

1 teaspoon lime juice

Chopped green onions and sesame seeds for garnish

Instructions
 

Marinate the Chicken: In a bowl, combine the chicken pieces and buttermilk. Cover and let it marinate in the refrigerator for at least 30 minutes, or up to overnight for deeper flavor.

    Prepare the Breading: In a shallow dish, mix the flour, garlic powder, onion powder, paprika, salt, and black pepper. In another dish, place the panko breadcrumbs.

      Coat the Chicken: Take each marinated chicken piece, shake off excess buttermilk, then dredge in the seasoned flour, ensuring an even coat. Dip back into the buttermilk, then coat thoroughly with panko breadcrumbs, pressing lightly to adhere.
