1 pound rotini pasta

2 tablespoons olive oil

1 pound boneless, skinless chicken breasts, cut into bite-sized pieces

1 teaspoon salt

1/2 teaspoon black pepper

4 cloves garlic, minced

1 cup chicken broth

1 cup heavy cream

1 cup grated Parmesan cheese

2 tablespoons fresh parsley, chopped

1 teaspoon Italian seasoning

2 tablespoons unsalted butter

Instructions
 

Cook the Pasta: In a large pot, bring salted water to a boil. Add the rotini pasta and cook according to the package instructions until al dente. Drain and set aside, reserving about 1/2 cup of pasta cooking water.

    Cook the Chicken: In a large skillet over medium-high heat, heat the olive oil. Season the chicken pieces with salt and pepper, then add them to the skillet. Cook until golden brown and cooked through, about 6-8 minutes. Remove the chicken from the skillet and set aside.

      Make the Sauce: In the same skillet, reduce the heat to medium and add the butter. Once melted, add the minced garlic and sauté until fragrant, about 1 minute. Pour in the chicken broth and bring to a simmer.

        Add Cream and Cheese: Reduce the heat to low and stir in the heavy cream and grated Parmesan cheese. Add the Italian seasoning and stir until the cheese is melted and the sauce is creamy. If the sauce is too thick, add a splash of reserved pasta cooking water to reach the desired consistency.
