1 lb chicken sausage, sliced

1 cup orzo pasta

4 cups low-sodium chicken broth

1 medium onion, diced

3 cloves garlic, minced

1 cup cherry tomatoes, halved

1 cup baby spinach

1 cup heavy cream

1 teaspoon Italian seasoning

1 teaspoon smoked paprika

Salt and pepper to taste

2 tablespoons olive oil

Fresh basil, for garnish

Grated Parmesan cheese, for serving

Instructions
 

Prepare the Sausage: In a large skillet, heat the olive oil over medium heat. Add the sliced chicken sausage and cook until browned, about 5-7 minutes. Remove the sausage from the skillet and set aside.

    Sauté Aromatics: In the same skillet, add the diced onion and sauté for about 3-4 minutes until softened. Stir in the minced garlic and cook for an additional 1 minute until fragrant.

      Cook the Orzo: Add the orzo to the pan, stirring to coat with the oil and aromatics. Pour in the chicken broth, bringing it to a boil. Reduce heat to a simmer and cook uncovered, stirring occasionally, for about 10-12 minutes until the orzo is al dente and has absorbed most of the liquid.

        Add Remaining Ingredients: Stir in the cherry tomatoes, baby spinach, heavy cream, Italian seasoning, smoked paprika, and the browned chicken sausage. Season with salt and pepper to taste. Cook for an additional 2-3 minutes until the spinach is wilted and everything is heated through.

          Serve: Remove from heat. Garnish with fresh basil and sprinkle grated Parmesan cheese on top before serving.
