1 lb boneless, skinless chicken thighs

2 tsp chili powder

1 tsp paprika

1 tsp garlic powder

½ tsp cumin

Salt and pepper, to taste

2 tbsp olive oil

2 cups fresh corn kernels (or 1 can of corn, drained)

1/4 cup mayonnaise

1/4 cup sour cream

1 lime, juiced

1/2 cup crumbled cotija cheese

1/4 cup fresh cilantro, chopped

Corn tortillas (for serving)

Optional toppings: diced avocado, sliced radishes, extra lime wedges

Instructions
 

Prepare the Chicken: In a bowl, combine the chili powder, paprika, garlic powder, cumin, salt, and pepper. Rub this spice mixture over the chicken thighs evenly. Heat the olive oil in a skillet over medium heat. Add the chicken and cook for about 6-7 minutes per side, or until the chicken is cooked through and has a lovely golden exterior.
