Ingredients

1 lb flank steak or sirloin, trimmed

Salt and pepper, to taste

1 tablespoon olive oil

8 slider buns

½ cup Cowboy Butter (see below for recipe)

Optional toppings: shredded lettuce, sliced tomatoes, pickles, and cheese

For Cowboy Butter:

½ cup unsalted butter, softened

2 tablespoons fresh parsley, chopped

1 tablespoon fresh chives, chopped

1 tablespoon garlic, minced

1 teaspoon smoked paprika

1 teaspoon Worcestershire sauce

½ teaspoon cayenne pepper (adjust to taste)

Salt and pepper, to taste

Instructions

Make the Cowboy Butter:

    - In a bowl, combine the softened unsalted butter, chopped parsley, chives, minced garlic, smoked paprika, Worcestershire sauce, cayenne pepper, salt, and pepper. Mix well until all ingredients are fully incorporated.

      - Transfer the mixture onto a sheet of parchment paper and roll it into a log. Twist the ends to seal and refrigerate until firm, about 30 minutes.

        Prepare the Steak:

          - Preheat your grill or skillet over medium-high heat.

            - Season the steak generously with salt and pepper on both sides. Drizzle with olive oil.

              - Grill or sear the steak for about 4-5 minutes per side for medium rare, or longer if preferred. Use a meat thermometer to ensure it reaches your desired doneness.

                - Remove from heat and let it rest for 5-10 minutes before slicing.

                  Assemble the Sliders:

                    - Slice the rested steak into thin strips against the grain.

                      - Toast the slider buns lightly on the grill or in a toaster.

                        - Spread a generous amount of Cowboy Butter on the bottom half of each slider bun.

                          - Layer with sliced steak and any additional toppings you like (lettuce, tomato, pickles, or cheese).

                            - Top with the other half of the bun and secure with a toothpick if necessary.

                              Serve:

                                - Serve the sliders warm, with the remaining Cowboy Butter on the side for dipping.
