2 cups jasmine rice

1 can (13.5 oz) coconut milk

1 cup chicken broth

1 lb chicken breast, diced

2 tablespoons olive oil

1 tablespoon soy sauce

2 cloves garlic, minced

1 inch ginger, grated

1 tablespoon lime juice

1 teaspoon turmeric powder

1 teaspoon cumin

Salt and pepper to taste

Fresh cilantro leaves, for garnish

Lime wedges, for serving

Optional toppings: sliced avocado, diced red bell pepper, sliced green onions, or chopped peanuts

Instructions
 

Cook the Rice:

    - Rinse the jasmine rice under cold water until the water runs clear to remove excess starch. In a medium saucepan, combine the rinsed rice, coconut milk, and chicken broth.
