8 slices of day-old bread (white or whole grain), cut into cubes

3 large eggs

1 cup milk (whole or almond)

1/4 cup granulated sugar

1 teaspoon vanilla extract

1 teaspoon ground cinnamon

1/4 teaspoon salt

1/4 cup unsalted butter, melted

1/4 cup brown sugar, packed

1 tablespoon granulated sugar (for topping)

1 teaspoon ground cinnamon (for topping)

Optional: maple syrup or powdered sugar for serving

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C) and grease a standard muffin tin with non-stick spray or butter.

    Prepare the Bread: In a large mixing bowl, combine the bread cubes and melted butter. Toss to coat the bread evenly with the butter, then set aside.

      Mix Wet Ingredients: In another bowl, whisk together the eggs, milk, 1/4 cup granulated sugar, vanilla extract, 1 teaspoon cinnamon, and salt until well combined.

        Combine Mixtures: Pour the egg mixture over the bread cubes and gently fold to coat all pieces. Let it sit for about 10-15 minutes to allow the bread to absorb the liquid.

          Fill Muffin Tin: Spoon the bread mixture into the prepared muffin tin, filling each cavity about 3/4 full.

            Prepare Cinnamon Sugar Topping: In a small bowl, mix together the brown sugar, 1 tablespoon granulated sugar, and 1 teaspoon cinnamon. Sprinkle this mixture generously over the top of the muffin batter in each cup.

              Bake: Place the muffin tin in the preheated oven and bake for 18-20 minutes or until the muffins are golden brown and puffed up. A toothpick inserted in the center should come out clean.

                Cool and Serve: Allow the muffins to cool in the tin for about 5 minutes before transferring them to a wire rack. Serve warm with maple syrup or sprinkle with powdered sugar if desired.
