Ingredients
  

1 lb ground beef or turkey

1 small onion, diced

2 cloves garlic, minced

1 can (15 oz) kidney beans, drained and rinsed

1 can (15 oz) black beans, drained and rinsed

1 can (14 oz) diced tomatoes (with juice)

1 can (8 oz) tomato sauce

2 cups beef broth or water

2 cups elbow macaroni

2 tablespoons chili powder

1 teaspoon cumin

1 teaspoon smoked paprika

Salt and pepper to taste

1 cup shredded cheddar cheese (more for topping)

Fresh cilantro or green onions for garnish

Instructions
 

In a large pot or Dutch oven, brown the ground beef or turkey over medium heat until cooked through. Drain excess fat if necessary.

    Add the diced onion and minced garlic to the meat, sautéing until the onion becomes translucent, about 3-4 minutes.

      Stir in the chili powder, cumin, smoked paprika, salt, and pepper, letting the spices bloom for about a minute.

        Add the kidney beans, black beans, diced tomatoes, tomato sauce, and beef broth to the pot. Stir well to combine.

          Bring the mixture to a simmer, then add the elbow macaroni. Stir to incorporate and cover the pot. Let it cook for about 10-12 minutes, or until the macaroni is tender, stirring occasionally.

            Once the macaroni is cooked, stir in the shredded cheddar cheese until melted and creamy. Adjust seasoning as needed.

              Serve hot, topped with additional cheese, fresh cilantro, or sliced green onions.
