1 lb ground chicken

1/2 cup breadcrumbs

1/4 cup grated Parmesan cheese

3 cloves garlic, minced

1 tablespoon fresh parsley, chopped

1 teaspoon smoked paprika

1 teaspoon red pepper flakes (adjust to taste)

1 teaspoon salt

1/2 teaspoon black pepper

1 tablespoon olive oil

Wooden or metal skewers (if using wooden, soak in water for 30 minutes)

Instructions
 

In a large mixing bowl, combine the ground chicken, breadcrumbs, grated Parmesan cheese, minced garlic, fresh parsley, smoked paprika, red pepper flakes, salt, and black pepper.

    Using your hands, mix the ingredients together until well combined and consistent in texture.

      Take a handful of the mixture and mold it around the skewer, shaping it into a sausage-like form. Repeat with the remaining mixture and skewers.

        Preheat your grill or grill pan over medium heat. Brush the skewers lightly with olive oil to prevent sticking.

          Once the grill is hot, place the skewers on it, cooking for about 4-5 minutes on each side, or until the chicken is cooked through and has a nice char.

            Remove the skewers from the grill and let them rest for a couple of minutes before serving.
