Ingredients

2 slices of sourdough bread

1 ripe avocado, mashed

1 cup cooked chicken breast, shredded (grilled or rotisserie)

½ cup shredded Monterey Jack cheese

¼ cup Greek yogurt or mayonnaise

1 tablespoon lime juice

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and pepper to taste

2 tablespoons fresh cilantro, chopped (optional)

Butter for toasting

Instructions

Prepare the Avocado Mixture: In a bowl, combine the mashed avocado, Greek yogurt (or mayonnaise), lime juice, garlic powder, onion powder, salt, pepper, and chopped cilantro (if using). Mix well until creamy.

Add Chicken: Gently fold the shredded chicken into the avocado mixture until evenly coated.

Assemble the Sandwich: Lay one slice of sourdough bread on a clean surface. Spread half of the avocado-chicken mixture on the bread, then sprinkle with half of the shredded Monterey Jack cheese. Place another slice of bread on top to create a sandwich.

Toast the Sandwich: Heat a skillet over medium heat and add a small amount of butter. Once melted, place the assembled sandwich in the skillet. Cook for about 3-4 minutes on each side, or until the bread is golden brown and the cheese has melted.

Half and Serve: Remove the sandwich from the skillet and let it cool slightly. Cut the sandwich in half and serve warm, garnished with additional cilantro if desired.
