2 cups cooked chicken, shredded or diced

1 ripe avocado, mashed

1 cup shredded mozzarella cheese (or your choice of cheese)

1/2 cup Greek yogurt or mayonnaise

1 tablespoon lime juice

1 tablespoon fresh cilantro, chopped (optional)

1 teaspoon garlic powder

Salt and pepper to taste

4 slices of whole grain or sourdough bread

2 tablespoons butter, softened

Arugula or spinach (for garnish)

Sliced tomatoes (optional)

Instructions
 

In a mixing bowl, combine the cooked chicken, mashed avocado, Greek yogurt (or mayonnaise), lime juice, cilantro (if using), garlic powder, salt, and pepper. Mix until all ingredients are well incorporated and creamy.

    Heat a skillet over medium heat and add a touch of butter.

      Spread a generous amount of the chicken and avocado mixture on two slices of bread. Top with shredded mozzarella cheese and then place the other two slices of bread on top to form sandwiches.

        Once the skillet is hot, place the sandwiches in the skillet. Cook for about 3-4 minutes on each side, or until the bread is golden brown and the cheese is melted.
