1 can (15 oz) kidney beans, drained and rinsed

1 tablespoon olive oil

1 medium onion, finely chopped

2 cloves garlic, minced

1 teaspoon ginger, grated

1 green chili, finely chopped (adjust to taste)

1 teaspoon cumin powder

1 teaspoon coriander powder

1 teaspoon garam masala

1/2 teaspoon smoked paprika

Salt and pepper to taste

1 cup shredded cheese (cheddar or a mix of cheddar and mozzarella)

4 slices of wholegrain bread

Fresh cilantro, chopped, for garnish

Optional: a squeeze of lemon juice

Sauté Aromatics: In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes.

    Add Garlic and Ginger: Stir in the minced garlic, grated ginger, and green chili. Cook for another 1-2 minutes until fragrant.

      Spice It Up: Add the cumin powder, coriander powder, garam masala, and smoked paprika. Stir well to coat the onion mixture in spices, cooking for another minute.

        Incorporate Beans: Add the drained kidney beans to the skillet. Gently mash some of the beans with the back of a spoon, leaving others whole for texture. Stir to mix well.

          Season: Season with salt and pepper to taste. If the mixture seems too dry, add a splash of water to loosen it. Cook for about 5 minutes, allowing the flavors to meld.

            Cheesy Goodness: Lower the heat and mix in half of the shredded cheese, allowing it to melt and incorporate into the bean mixture.

              Toast the Bread: Meanwhile, toast the slices of wholegrain bread until golden brown and crispy.
