12 ounces cheese tortellini (fresh or frozen)

1 pound ground beef

1 small onion, diced

1 Bell pepper, diced (red or green)

2 cloves garlic, minced

1 (10 oz) can enchilada sauce (mild or spicy)

1 cup shredded cheddar cheese

1 cup shredded Monterey Jack cheese

1 teaspoon chili powder

1 teaspoon cumin

Salt and pepper to taste

Fresh cilantro for garnish (optional)

Sour cream for serving (optional)
