For the Butter Steak Bites:

1 lb (450g) beef sirloin or filet mignon, cut into 1-inch cubes

Salt and pepper, to taste

2 tablespoons olive oil

4 tablespoons unsalted butter

4 cloves garlic, minced

1 teaspoon fresh rosemary, chopped

1 teaspoon fresh thyme, chopped

Fresh parsley, for garnish

For the Garlic Herb Potatoes:

1 lb (450g) baby potatoes, halved

2 tablespoons olive oil

3 cloves garlic, minced

1 teaspoon fresh rosemary, chopped

1 teaspoon fresh thyme, chopped

Salt and pepper, to taste

Optional: Fresh parsley, for garnish

Prepare the Garlic Herb Potatoes:

    - Preheat your oven to 400°F (200°C).

      - In a large bowl, toss the halved baby potatoes with olive oil, minced garlic, rosemary, thyme, salt, and pepper until well coated.

        - Spread the potatoes in a single layer on a baking sheet.

          - Roast in the preheated oven for 25-30 minutes, or until golden brown and fork-tender, stirring halfway through for even cooking.

            Cook the Butter Steak Bites:

              - While the potatoes are roasting, season the cubed beef with salt and pepper.

                - Heat a large skillet over medium-high heat and add olive oil.

                  - Once the oil is hot, add the steak bites in a single layer, cooking for 2-3 minutes on one side without moving them to get a nice sear.

                    - Flip the steak bites and add the butter, minced garlic, rosemary, and thyme. Sauté for another 2-3 minutes, basting the steak with the melted butter until cooked to your desired doneness (medium-rare is about 130°F/54°C).

                      - Remove from heat and let rest for a minute.

                        Plate and Serve:

                          - On a serving dish, arrange the Garlic Herb Potatoes and top with the Butter Steak Bites.

                            - Drizzle the buttery herb sauce from the skillet over the steak bites and garnish with fresh parsley.
