Buffalo Chickpea Taquitos

Easy to make and ready in just 35 minutes, they're great for parties or as a tasty weeknight dinner. Bake until golden brown and serve with your favorite dipping sauce. Ingredients
  

1 can (15 oz) chickpeas, drained and rinsed

1/4 cup buffalo sauce (adjust to taste)

1/4 cup cream cheese, softened (or vegan cream cheese)

1/2 cup shredded cheddar cheese (or dairy-free cheese)

1/4 tsp garlic powder

1/4 tsp onion powder

Salt and pepper to taste

8 small tortillas (corn or flour)

2 tbsp olive oil

Fresh cilantro or green onions, for garnish (optional)

Instructions
 

Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

    In a large mixing bowl, mash the chickpeas with a fork or potato masher until chunky but not pureed.

      Add the buffalo sauce, cream cheese, shredded cheese, garlic powder, onion powder, salt, and pepper to the bowl with the chickpeas. Mix well to combine until uniformly mixed.

        Lay out the tortillas and spoon about 2-3 tablespoons of the chickpea mixture onto one end of each tortilla.

          Roll the tortillas tightly to form taquitos, folding in the sides slightly as you roll to prevent filling from spilling out.

            Brush each taquito lightly with olive oil on all sides and place them seam-side down on the prepared baking sheet.

              Bake in the preheated oven for about 15-20 minutes, or until the taquitos are golden brown and crispy.

                Serve warm garnished with fresh cilantro or green onions, along with extra buffalo sauce or ranch for dipping.
