Bow Tie Pasta Salad

8 oz bow tie pasta (farfalle)

1 cup cherry tomatoes, halved

1 cup cucumber, diced

1/2 red bell pepper, diced

1/4 red onion, finely chopped

1/2 cup black olives, sliced

1 cup feta cheese, crumbled

1/4 cup fresh parsley, chopped

1/2 tsp dried oregano

Salt and pepper to taste

1/3 cup olive oil

2 tbsp red wine vinegar

1 tbsp Dijon mustard

1 clove garlic, minced

Instructions
 

Cook the Pasta: Bring a large pot of salted water to a boil. Add the bow tie pasta and cook according to package instructions until al dente. Drain and rinse under cold water to stop the cooking process. Set aside in a large mixing bowl.

    Chop the Vegetables: While the pasta is cooling, prepare the vegetables. Halve the cherry tomatoes, dice the cucumber and red bell pepper, and finely chop the red onion.

      Combine Ingredients: In the bowl with the cooled pasta, add the chopped cherry tomatoes, cucumber, red bell pepper, red onion, black olives, feta cheese, and fresh parsley.

        Make the Dressing: In a small bowl, whisk together the olive oil, red wine vinegar, Dijon mustard, minced garlic, dried oregano, salt, and pepper until well combined.

          Dress the Salad: Pour the dressing over the pasta and vegetable mixture. Toss gently to ensure everything is evenly coated with the dressing.
