Ingredients

500g boneless chicken thighs, cut into bite-sized pieces

2 tablespoons soy sauce

1 tablespoon oyster sauce

1 tablespoon cornstarch

1 tablespoon vegetable oil

1 onion, thinly sliced

3 cloves garlic, minced

1-inch piece of ginger, minced

1 bell pepper, sliced (any color)

2 tablespoons freshly cracked black pepper (adjust to taste)

1 teaspoon sugar

2 green onions, chopped (for garnish)

Cooked rice (for serving)

Instructions

Marinate the Chicken: In a mixing bowl, combine the chicken pieces with soy sauce, oyster sauce, and cornstarch. Toss well to ensure all pieces are coated. Let it marinate for at least 30 minutes.

Heat the Oil: In a large skillet or wok, heat the vegetable oil over medium-high heat until shimmering.

Sauté Aromatics: Add the sliced onion, minced garlic, and ginger to the skillet. Stir-fry for about 2-3 minutes, until fragrant and the onions start to soften.

Cook the Chicken: Add the marinated chicken to the skillet. Stir-fry for 5-7 minutes, or until the chicken is cooked through and lightly browned.

Add Vegetables and Seasoning: Toss in the sliced bell pepper, freshly cracked black pepper, and sugar. Stir-fry for another 2-3 minutes until the bell pepper becomes tender but still crisp.

Serve: Remove from heat, garnish with chopped green onions, and serve hot over cooked rice.
