Ingredients

3 ripe bananas, mashed

1/2 cup crushed pineapple, drained

1/2 cup shredded coconut (sweetened or unsweetened)

1/2 cup granulated sugar

1/4 cup brown sugar, packed

1/2 cup unsalted butter, melted

2 large eggs

1 teaspoon vanilla extract

1 teaspoon baking soda

1/4 teaspoon salt

1 1/2 cups all-purpose flour

1/2 teaspoon ground cinnamon (optional)

1/2 cup chopped walnuts or macadamia nuts (optional)

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C) and grease a 9x5-inch loaf pan.

Mix Wet Ingredients: In a mixing bowl, combine the mashed bananas, crushed pineapple, melted butter, granulated sugar, brown sugar, eggs, and vanilla extract. Mix well until the ingredients are fully incorporated.

Combine Dry Ingredients: In a separate bowl, whisk together the flour, baking soda, salt, and cinnamon (if using).

Combine Mixtures: Gradually add the dry ingredients to the wet mixture, folding gently until just combined. Be careful not to overmix; some lumps are okay.

Add Coconut and Nuts: Fold in the shredded coconut and chopped walnuts or macadamia nuts (if using) until evenly distributed throughout the batter.

Pour and Bake: Pour the batter into the prepared loaf pan and smooth the top with a spatula. Bake in the preheated oven for about 60-70 minutes, or until a toothpick inserted into the center comes out clean.

Cool and Serve: Once baked, remove from the oven and let the banana bread cool in the pan for 10 minutes. Then, transfer it to a wire rack to cool completely before slicing.

Enjoy: Serve warm or at room temperature, and enjoy the delightful tropical flavors!
