For the Dumplings:

1 cup all-purpose flour

1/2 tsp salt

1/4 tsp baking powder

1/2 cup boiling water

1/2 cup finely chopped vegetables (carrots, bell peppers, and green onions)

1/4 cup finely chopped fresh cilantro

1 tsp curry powder

1/2 tsp ginger paste

1/2 tsp garlic paste

For the Soup:

4 cups vegetable broth

1 can (400 ml) coconut milk

2 tbsp red curry paste

1 tbsp soy sauce

1 tbsp lime juice

1 tsp sugar

Salt and pepper to taste

Fresh cilantro leaves for garnish

Lime wedges for serving

Instructions
 

Make the Dumpling Dough:

    - In a mixing bowl, combine flour, salt, and baking powder. Gradually add boiling water, mixing with a wooden spoon until a dough forms. Knead the dough on a floured surface for about 5 minutes until smooth. Cover and let rest for 30 minutes.

      Prepare Dumpling Filling:

        - In a separate bowl, mix together the chopped vegetables, cilantro, curry powder, ginger paste, and garlic paste. Season with salt and pepper to taste.
