BBQ Chicken Quesadilla

2 cups cooked chicken, shredded (preferably BBQ-flavored or plain)

1 cup BBQ sauce (your favorite brand or homemade)

1 ½ cups shredded cheese (cheddar and mozzarella blend works well)

4 large flour tortillas

1 cup corn (fresh, frozen, or canned - drained)

½ red bell pepper, diced

¼ cup red onion, finely chopped

1 teaspoon cumin

1 teaspoon smoked paprika

2 tablespoons olive oil

Fresh cilantro, for garnish (optional)

Sour cream or Greek yogurt, for serving (optional)

Instructions
 

Prep the Chicken Mixture: In a mixing bowl, combine the shredded chicken and BBQ sauce. Mix until the chicken is well coated. Add the corn, diced red bell pepper, red onion, cumin, and smoked paprika. Stir everything until well-incorporated.

    Assemble the Quesadillas: Place a tortilla on a flat surface. On one half of the tortilla, sprinkle a layer of cheese (about ¼ cup), then spread a generous portion of the BBQ chicken mixture over it. Top with another layer of cheese before folding the tortilla in half.

      Cook the Quesadillas: Heat 1 tablespoon of olive oil in a large skillet over medium heat. Once hot, carefully place the folded quesadilla in the skillet. Cook for about 3-4 minutes on one side until golden brown and crispy. Carefully flip and cook the other side for an additional 3-4 minutes. Repeat the process with the remaining tortillas and filling, adding more olive oil as needed.
