BBQ Chicken Grilled Cheese

Ingredients
  

2 slices of sourdough bread

1 cup cooked shredded chicken

1/2 cup BBQ sauce (your choice of flavor)

1 cup shredded cheddar cheese

1/2 cup mozzarella cheese

1 tablespoon butter

1/4 teaspoon garlic powder (optional)

1/4 teaspoon onion powder (optional)

Fresh cilantro or parsley for garnish (optional)

Instructions
 

Prepare the Chicken: In a bowl, combine the shredded chicken with the BBQ sauce. Mix well so that the chicken is fully coated. Set aside.

    Assemble the Sandwich: Lay one slice of sourdough bread on a clean surface. Sprinkle half of the cheddar cheese evenly over the bread. Spread the BBQ chicken mixture on top of the cheese, and then layer the mozzarella cheese on top of the chicken. Finally, top with the remaining cheddar cheese and place the second slice of sourdough bread on top.

      Butter the Bread: In a small bowl, mix the butter with garlic powder and onion powder (if using) until well combined. Spread the butter mixture evenly on the top side of the sandwich.

        Grill the Sandwich: Heat a non-stick skillet over medium heat. Once hot, place the assembled sandwich in the skillet, buttered side down. Cook for about 4-5 minutes until golden brown.

          Flip and Finish Cooking: Butter the top slice of the sandwich while it cooks. Carefully flip the sandwich using a spatula and grill the other side for another 4-5 minutes until it’s crispy and the cheese is melted.

            Serve: Remove the sandwich from the skillet and let it cool for a minute. Slice in half, garnish with fresh cilantro or parsley if desired, and serve warm.
