For the Chicken:

1 lb boneless, skinless chicken thighs

1/2 cup cornstarch

1 teaspoon paprika

1 teaspoon garlic powder

Salt and pepper to taste

1/4 cup vegetable oil (for frying)

For the Bang Bang Sauce:

1/2 cup mayonnaise

2 tablespoons sweet chili sauce

1 tablespoon sriracha (adjust to taste)

1 teaspoon rice vinegar

1 teaspoon honey (optional)

For the Bowls:

2 cups cooked jasmine rice or quinoa

1 cup shredded carrots

1 cup sliced cucumbers

1 cup red cabbage, thinly sliced

1 avocado, sliced

Green onions, sliced (for garnish)

Sesame seeds (for garnish)

Fresh cilantro (for garnish)

Instructions
 

Prep the Chicken: Pat the chicken thighs dry with paper towels. In a bowl, mix cornstarch, paprika, garlic powder, salt, and pepper. Toss the chicken thighs in the cornstarch mixture until well-coated.

    Fry the Chicken: Heat vegetable oil in a large skillet over medium-high heat. Once hot, add the chicken thighs and cook for about 4-5 minutes on each side or until golden brown and cooked through. Remove from the skillet and let rest for a few minutes before slicing into bite-sized pieces.
