1 lb (450g) boneless, skinless chicken thighs

1 cup all-purpose flour

2 large eggs, beaten

1 cup panko breadcrumbs

Salt and pepper, to taste

1 cup cooked jasmine rice

1 cup broccoli florets

1 carrot, thinly sliced

1 red bell pepper, julienned

2 green onions, chopped (for garnish)

Sesame seeds (for garnish)

Bang Bang Sauce:

1/2 cup mayonnaise

2 tablespoons sweet chili sauce

1 tablespoon sriracha (adjust to taste)

1 tablespoon lime juice

1 teaspoon garlic powder

1 teaspoon honey

Prepare the Bang Bang Sauce: In a small bowl, combine mayonnaise, sweet chili sauce, sriracha, lime juice, garlic powder, and honey. Whisk until smooth and set aside.

    Cook the Chicken:

      - Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.

        - Season the chicken thighs with salt and pepper.

          - Set up a breading station: one bowl with flour, one with beaten eggs, and the third with panko breadcrumbs.

            - Dredge each chicken thigh in flour, dip in the beaten eggs, then coat with panko breadcrumbs.

              - Place the breaded chicken on the prepared baking sheet and bake for 25-30 minutes or until golden brown and cooked through (internal temperature of 165°F/74°C).

                Prepare the Vegetables: While the chicken is baking, steam or blanch the broccoli florets, sliced carrots, and bell pepper until tender-crisp (about 3-4 minutes). Drain and set aside.

                  Assemble the Bowls:

                    - Once the chicken is cooked, allow it to rest for a few minutes before slicing it into strips.
