Ingredients
  

1 lb boneless, skinless chicken breasts

1 cup cornstarch

2 eggs, beaten

1 cup panko breadcrumbs

1 tsp garlic powder

1 tsp onion powder

Salt and pepper to taste

2 cups cooked jasmine rice

1 cup shredded carrots

1 cup sliced cucumbers

1/2 cup sliced green onions

1/4 cup chopped cilantro

Sesame seeds for garnish

Bang Bang Sauce:

1/2 cup mayonnaise

1/4 cup sweet chili sauce

1 tbsp sriracha (adjust for spice level)

1 tbsp lime juice

Prepare the Chicken: Start by cutting the chicken breasts into bite-sized pieces. Season with salt and pepper. Set up a breading station with three bowls: one with cornstarch, one with beaten eggs, and one with panko mixed with garlic powder and onion powder.

    Bread the Chicken: Dredge each piece of chicken in cornstarch, shaking off the excess. Dip in the beaten eggs, then coat in the panko mixture, pressing gently to adhere.

      Cook the Chicken: Heat about 1/2 inch of oil in a large skillet over medium-high heat. Once hot, carefully add the breaded chicken pieces. Fry until golden brown and crispy, about 4-5 minutes per side. Remove and place on paper towels to drain excess oil.

        Make the Bang Bang Sauce: In a bowl, whisk together mayonnaise, sweet chili sauce, sriracha, and lime juice. Adjust seasoning and spiciness to taste.
