1 lb boneless, skinless chicken thighs

1 cup rice (white or brown)

1 cup broccoli florets

1 red bell pepper, diced

1 cup shredded carrots

2 green onions, sliced

2 cloves garlic, minced

1 tablespoon ginger, minced

1/4 cup mayonnaise

1/4 cup sweet chili sauce

1 tablespoon sriracha (adjust to taste)

1 tablespoon soy sauce

1 tablespoon lime juice

1 tablespoon sesame oil

Salt and pepper to taste

Sesame seeds for garnish

Prep the Chicken: Season the chicken thighs with salt and pepper. In a large skillet, heat sesame oil over medium-high heat. Add the chicken and cook until browned and fully cooked through (about 6-8 minutes per side). Remove from skillet and allow to rest before slicing thinly.

    Cook the Rice: While the chicken is cooking, in a separate pot, cook the rice according to package instructions.

      Prepare Vegetables: In the same skillet used for the chicken, add a little more sesame oil if needed. Sauté the minced garlic and ginger for about 30 seconds until fragrant.
